I lived on the Noto Peninsula in Ishikawa, Japan. A town called Anamizu had an oyster festival every winter. The things were massive. Vendors grilled them in their shell until they simmered in seawater and their own juice.

No lemon, shallot, or hot sauce. You just tipped it back. Perfect.

Love everything about this, Elisabet! Beautiful images, and a wonderful essay on the joys and history of oysters. We are so fortunate in MA to have some of the best oysters in the world! (I love Duxbury & ICO, but am partial to Barnstable oysters myself.)

Moon Shoals are the GOAT. If you go to any of the Row 34 restaurants, they often have many Barnstable oysters on the menu, including Moon Shoals.

My favorite part about ICO is they have no problem highlighting other great oyster farmers in the region. Their website ships everything — which I’ve been known to take advantage of even though I live under an hour from their shop! If you sampling, I’d also recommend heading north to Maine and oysters from the Damariscotta area!

Thank you for the tips Lou! I've never order them to be shipped, but I may do if we have friends around :)

I think part of the experience of eating oysters is being in the ambience, though. Specially now that is Summer, driving down the coast to savor them sounds like a fantastic plan! I haven't been to Maine yet but I'll try to remedy that in the coming months! Thank you for the recommendation :)
