This is so fascinating. I had no idea sugar was a preservative. Since salt is in everything, it's nice to have a deeper understanding of it's history.

Thank you Lala! Sugar also preserves food, specially fruits (think of jams, marmalades, candies...). But it was so expensive that for centuries it was mostly used as a medicine and for royals! Salt seems to have been more available even if also costly. I'm glad you liked it :)
