Beautifully written and captured and a very interesting read.
On the Noma website I see that they are now offering reservations for their "Summer Season" which runs through September. Do you think that they will ever actually close the main location to diners? It seems there are some critics online who are skeptical this is not (at least to some degree) a bit of smart marketing. Apparently Noma has closed previously, only to reopen again....?
I missed that on the website! You raised a very good point, it could just be a marketing strategy as they previously had said they would close at the end of 2024 and they have been extending it to now two more seasons. And, as you mention, this is already what they call "Noma 2.0", so, who knows?
You raise some very good questions. here. Fine dining may not be here for long. Especially with the impact on workers. Those open sandwiches sound delicious!
Looking forward to reading this!
Thank you Jasmine! Let me know your thoughts! 🥰
